BETSY SAYS RELAX...

Make friends with a pomegranate! This rich ruby red fruit is just bursting with health giving goodies. I know it can be a devil to peel and getting at those juicy seeds is not easy.

In the USA it seems that supermarkets are advising their customers to sear the skin and plunge into a bowl of water. It will be easier to peel and remove the seeds from the pith if the fruit is underwater.

Just throw the good bits into a colander and rinse and hey presto, magic seeds! I say magic because they have the ability to protect from cancer and heart disease and keep your skin looking youthful with powerful ingredients like resveratrol, lycopene, vitamin C, anthocyanins and ellagic acid . If you are going to juice them at home then pop them in the food processor and strain through a fine sieve.

Try adding a handful of seeds to a fresh vegetable or fruit salad. Look out in the supermarkets for a good quality pomegranate jucie called POM. It comes in plain pom juice or mixed with mandarin, blueberry, mango or cherry.

My favourite vitality breakfast juice? Equal measures of pomegranate and cranberry juice, and if you read my column last week you will know why. Very refreshing and less harrowing than having to swallow loads of vitamin pills!
