Gulf Weekly A lesson in Italian cuisine

In a three-hour cooking class last week, Chef Giordano shared some of his culinary secrets with GulfWeekly readers and a class of food enthusiasts aiming to impress at the next dinner party they host.

He revealed his quick cooling methods of throwing freshly-boiled spinach into ice-cold water, how he only salts his food after cooking and demonstrated how to bash a steak perfectly.

He skipped around the small cucina and showcased his skills to a class of 16, sharing his recipe for eggplant parmigiana (a mozerella, parmesan, tomato sauce and eggplant dish) and bistecca in guazzeto e gnocchi (steak and spinach gnocchi with a tomato sauce) all whilst providing the history of certain vegetables, safety tips and which utensils to use.

Anood Abbas, 25, from Hamad Town, said: “The class was amazing. He makes everything so simple and easy to follow. It’s so authentic and straightforward to make and smells so good. He even taught us a few tricks and provided us with the history of dishes which is always nice. I will definitely be attending the next class next month.”

She may see more than one more familiar face in the crowd next time around too.

Alaa Redha, 24, from A’ali, said: “I think the eggplant dish was my favourite, I’m going to try making it at home but replace the eggplant with potatoes. I think with his recipe it will work perfectly. The class was fun and a good idea. Italian cuisine is my favourite and that’s the main reason I joined and I will be coming back for more lessons.”

James Borgal, 43, from Juffair, added: “I’ve always wanted to learn how to cook, especially Italian food, so when I found out about the cooking class, there was no better opportunity to learn than from an Italian chef. It was great fun and he started with the basics.”

The cooking class costs BD10 which includes an appetiser, main course and one complimentary beverage. The next class will take place on February 20.
