Chef Louis Issa has been chef for more than30 years. He, like most other Italian chefs, is also inspired by his mum’s cooking.

The first restaurant he opened was in 1978 in Montreal called “Pizza Fiore”.
His restaurant Luigi’s in Bahrain is located off Budaiya Road in Cypress Gardens.  
“I discovered that Bahrainis love Italian food, not just adults but youngsters as well,” he said. “They love pizza and pasta dishes. Shrimp bruschetta and penne chicken is quite popular with lot of guests. We have plenty of pasta dishes on the menu but I try and change the recipes to give variety and make something special each week.”
Louis kindly also offered to share one of his recipes with us which the readers can try at home.

Penne with Veal and Pesto (Serves 4):
Ingredients:
Veal scallops 6
Fresh mushrooms (sliced) 200gm
Pesto (preferably basil) 4-5 tbs
Cream 200 ml
One or two table spoon of olive oil and butter
Penne 2 cups

Method:
Cook the veal scallop in olive oil and butter for one minute side by side on high fire.
Remove from fire and put it aside. Cut into slices when cool. You can use the same pan to cook the mushrooms slightly. Remove the mushrooms and put aside. Mix the basil pesto with cream then add to the pan. Cook slowly on low fire, then add the pasta, cooked veal and mushrooms.  Serve with grated parmesan.
