Healthy food does not have to be boring. And believe it or not, desserts can taste even better without sugar!
You might not believe me, but I have a great idea that will work for the whole family – banana ice cream cake. It’s easy, quick and, most importantly, it’s delicious!
For the base, mix two ¼ cups of raw almonds with one cup of soft dates and ½ tsp cinnamon, plus a pinch of sea salt. Process well and press into the bottom of a cheesecake pan and freeze for 15 minutes until you make the filling.
For the filling, mix six previously frozen bananas with one cup of soft dates and cinnamon to taste. Process well until well blended.
Pour this mixture onto the base and then decorate with banana slices, chopped walnuts, and desiccated coconut, then put it in the freezer until fully frozen. Remove from the freezer a few minutes before serving to allow for easy cutting, and, of course, serve cold.
No sugar, butter, flour, or eggs; this makes it delicious and healthy!
