Healthy Rangeena

Rangeena is a lovely Bahraini dessert which I love, but I always hesitate to eat it because it’s usually full of wheat and gluten and cheap oil. So I decided to make a healthier version of it.

The base is still the same - line up soft fresh dates in a serving plate. Then instead of wheat flour, I use quinoa flour. This instantly makes it gluten-free and more healthy.

Mix this quinoa flour with organic coconut oil (instead of cheap vegetable oil) and stir on a low heat until it starts to smell cooked. Coconut oil is a much healthier alternative to cheap vegetable oil because it has many health benefits to the body as well as being more tolerant to heat than most oils (so it doesn’t go rancid in the cooking process).

Add some cardamom powder for a final stir. Then pour the mixture generously on the fresh dates until they are soaked and completely covered.

The aromas of this dish are beautiful, and the taste is warm and comforting. It’s an ideal alternative to unhealthy desserts and one of the best Arab comfort food.
