Olive paste as a dip or topping

Olives make a great snack. They contain the good oils that feed the brain as well as compounds that improve immunity and protect you from common allergies, especially on dusty days.

But you can make olives even more interesting if you become creative in presenting them.

One idea that I love is making olive paste to use as a topping for sandwiches or a dip for vegetable sticks. 

Get 500g of green pitted olives and 500g of black pitted olives and add them to the food processor and blend well. Then add some olive oil, crushed garlic and lemon juice and continue to blend.

From here, you can get as creative as you like. I like to also add sundried tomatoes, pine nuts, and a sprinkle of zaatar. 

Blend well to make a paste and add to crackers or rice crakes for a quick healthy and delicious snack or have it for breakfast with carrot and cucumber sticks.
